WOW! We had an incredible full moon this past week. When I went to work Friday morning, the entire sky was lit up by the moon. According to the paper, the moon was 14% bigger and 30% brighter than any other full moon this year! Just gorgeous! And how about a Texas High School football update? The Allen High School Eagles won again, and now play for the 5A State Championship this next Saturday in Houston. GO Eagles! Oh yea! Should mention that pro team that plays, or is that ‘creates controversy’, that plays in Dallas. They beat the NY Giants last night have kept their play-off hopes alive. I enjoy text-bantering with good friend Sandra Steigman when the Cowboys play. She is an avid fan! Donna and I finally found some inexpensive Hawaiian food, only about 15 – 20 minutes away. It is char-broil, but not nearly as good as what we had grown accustomed to in Clark County, Washington! And speaking of eating! We enjoyed a Mexican food lunch Saturday in Dallas at La Acapulquena, one of our favorites. And we finally worked up the courage to order menudo. Due to the length of time needed to cook tripe to be tender enough to be edible, menudo is generally cooked in large batches and sold as a special menu item. It is only sold as a weekend-only specialty at La Acapulquena. Donna and I ate the rojo or red variety. Would we order it again? Probably not! Menudo is often eaten for breakfast and is known as the "Breakfast of Champions" in New Mexico and Texas.
We haven't posted anything for around 6+ years! It's time to get back to it! We will be posting a new label about North Texas Smoke & Arizona Livin' - be sure and read 'em if you like to eat or keep up with our smoking news for North Texas Smoke & misc. recipes!

Interesting info about the full moon. You should have seen it with everything on the ground covered in ice!
You are brave to try menudo - it is a little too far off the beaten path for me.
