Grandson Connor was here last night for a ‘sleep-over’ while his dad was in Minneapolis and his mom was co-hosting a bridal shower in Dallas. Connor loves Star Wars and is shown here with his favorite light saber. We have had too many light saber battles to count! This morning he wanted a sweet potato Mickey Mouse pancake for breakfast. Earlier this summer Donna and I were in Lubbock and had breakfast at a pancake house downtown the morning we left. They had these awesome sweet potato pancakes and sold the mix at the cashier stand. With a name like that it would have to be good. Right? We used up the bag we bought, but found more at Market Street here in Allen! YUM!
